Curry sausage with fried potatoes

Ingredients

  • 600 g waxy potatoes
  • 1 big onion
  • 1 TEASPOON Butter
  • 1 TEASPOON demerara sugar
  • 2-3 TABLESPOONS Curry Powder
  • 200 g chunky tomatoes
  • 1 pickled gherkin
  • 100 g Tomato ketchup
  • 2-3 TABLESPOONS Beef broth
  • 1-2 TABLESPOONS Fruit vinegar
  • 1 TABLESPOON Sambal Oelek
  • 7-10 Tbsp Salt
  • 30 g streaky smoked bacon
  • 2 TABLESPOONS clarified butter
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Oil
  • 4 Curry sausages without skin (pre-order from the butcher)

Directions

    Wash the potatoes thoroughly, cover and cook in boiling water for 15-20 minutes. Pour off, rinse with cold water, let it evaporate a little. Peel the potatoes and let them cool down

    For the curry sauce peel 1/2 onion and chop finely. Melt butter in a small pot. Fry the onion cubes in it until transparent. Sprinkle sugar over them and caramelise lightly. Sprinkle with 2 tbsp. curry and sauté briefly. Add tomatoes, bring to the boil and boil down for 10-15 minutes while stirring

    Finely dice the cucumber. Add cucumber cubes, ketchup and stock to the sauce and season vigorously with vinegar, sambal oelek and salt. Keep the sauce warm

    Cut the potatoes into slices. Dice bacon and remaining onion. Heat clarified butter in a large, coated pan. Fry the bacon in it for 5-6 minutes while turning it until crispy. Add the onion after about 3 minutes, remove everything. Add potatoes to the bacon fat and fry for approx. 10 minutes, turning over. Season with salt and pepper. Add bacon mixture again and heat up

    Heat the oil in a frying pan. Fry the sausages in it until golden brown, turning them over. Serve with the curry sauce. Sprinkle with the rest of the curry powder. Serve with the fried potatoes. Possibly add some French fries
