Currant Vanilla Jelly

Ingredients

  • 1 kg blackcurrants
  • 1 Vanilla pod
  • 1 package (500 g) Gelling sugar 2:1

Directions

    Wash the fruit, pluck it from the stalks and juice it with a fruit press. Cut the vanilla pod lengthwise. Scrape out the pulp with the back of a knife

    Put the berry juice, vanilla pod and pulp and the jam sugar in a pot. Bring to the boil over a high heat while stirring and boil for at least 3 minutes while stirring continuously. Pour the finished jelly into previously hot-rinsed glasses with twist-off lids. Close the jars well, turn them over and let them stand on the lid for about 5 minutes. Turn them over again and let them cool down
