Ingredients

  • 7-10 Tbsp Grease
  • 200 g soft butter/margarine
  • 200 g Sugar
  • 1 package Vanillin sugar
  • 7-10 Tbsp grated rind of
  • 1 untreated lemon
  • 1 Egg (Gr. M)
  • 400 g Flour
  • 1 TEASPOON Baking Powder
  • 500 g (720 ml) fresh or 1 glass
  • 7-10 Tbsp Sweet/sour cherries
  • 200 g Cherry Jam
  • 7-10 Tbsp Mint

Directions

    Grease a springform pan (26 cm Ø). Cream fat, sugar, vanilla sugar and lemon peel with the whisk of the hand mixer. Stir in the egg. Mix flour and baking powder.

    Stir in half of it. Knead in the rest of the flour and mix into crumbles. Press half of the crumbles into the springform pan. Pre-bake in the preheated oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for approx. 15 minutes

    In the meantime, wash, de-stem and stone the cherries. Stir into the jam and spread on the base. Sprinkle with remaining crumbles and bake at the same temperature for another 20-25 minutes. Let it cool down. Decorate with mint if desired. Whipped cream tastes half stiff
