Crêpes with marinated strawberries and white chocolate sauce

Ingredients

Servings: 4
  • 50 g Flour
  • 2 TEASPOONS Sugar
  • 1 pinch Salt
  • 125 ml Milk
  • 1 egg (size M)
  • 50 g Whipped cream
  • 100 g white chocolate
  • 1 small untreated orange
  • 500 g Strawberries
  • 3 TABLESPOONS Orange liqueur
  • 10 g clarified butter for baking
  • 7-10 Tbsp Lemon balm

Directions

    Mix flour, 1 teaspoon sugar, salt and milk. Stir in egg. Let dough rest for about 15 minutes

    Heat the cream and remove from the heat. Roughly chop the chocolate and melt it in the cream, stirring occasionally

    Wash the orange and rub half of the peel thinly. Halve the orange and squeeze 1/2 orange. Wash, clean and halve or quarter the strawberries. Mix orange peel, 2-3 tbsp. juice, strawberries, 1 tsp. sugar and liqueur and marinate for approx. 15 minutes

    Grease a coated pan with some clarified butter. Pour in 1/4 of the dough and spread it thinly on the bottom of the pan by swinging it back and forth. Bake from both sides until golden brown. Bake 3 more crêpes from the remaining dough. Arrange the crêpes with strawberries on plates and drizzle with the sauce. Decorate with lemon balm
