Creamy farmer's breakfast with fried egg

Ingredients

Servings: 3
  • 750 g large potatoes (firm boiling)
  • 3-4 Tbsp oil, 1 onion
  • 7-10 Tbsp Spice iodized salt
  • 7-10 Tbsp white pepper
  • 1 (approx. 125 g) slab of smoked ham
  • 3 small gherkins
  • 1/2 bunch Parsley
  • 100 g Whipped cream
  • 3 Eggs

Directions

    Peel, wash and slice the potatoes. Heat 2-3 tablespoons of oil in a large coated frying pan. Fry the potatoes for about 15 minutes, turning them frequently

    Peel and finely chop the onion. After about 10 minutes fold into the potatoes. Season the potatoes with salt and pepper. Mix and continue frying

    Cut ham and gherkins into not too small cubes. Wash and finely chop the parsley. Pour the cream over the potatoes and braise everything else for another 5 minutes

    Heat 1 tablespoon of oil in a second pan. Fry the eggs in it to fried eggs, season. Serve with fried potatoes, ham and cucumber. Sprinkle with parsley
