For the dough, knead flour, 1 pinch of salt, 90 ml lukewarm water and oil to a smooth dough. Cover and put in a cool place for about 2 hours. In the meantime, wash the raisins, drain and soak in the rum.
Chop the walnuts. Wash, halve and seed the grapes. Peel apple and pear, cut into slices and remove seeds. Cut the fruit flesh into small pieces. Drizzle with lemon juice. Stir cream cheese and 2 egg yolks until smooth.
Mix prepared fruit, raisins, walnuts and cinnamon with the cream. Roll out the dough very thinly on a floured work surface and place on a floured cloth. Spread the mixture evenly over it. Use the cloth to form a strudel.
Place on a baking tray lined with baking paper. Melt the butter and brush the strudel with it. Bake in the preheated oven (electric: 200 °C/ gas: level 3) for 30-40 minutes. For the sauce, whip red wine, sugar, remaining egg yolks and lemon juice in a hot water bath until creamy.
Serve immediately. Dust with cocoa. Garnish as desired with sugared grapes and lime.
