Put flour, 240 g fat and 100 g sugar in a bowl. Warm milk lukewarm and dissolve yeast in it. Add yeast milk to the bowl. Mix to a smooth dough with the dough hooks of the hand mixer.
Cover and leave to rise in a warm place for about 40 minutes. Defrost deep-frozen plums. Roll out 3/4 of the dough in the greased fat pan of the oven (approx. 32 x 39 cm). Cover with plums.
Sprinkle 60 g sugar over the plums. Bake in the preheated oven (electric oven: 200 °C/ gas: level 3) on the bottom rack for approx. 35 minutes. Roll out remaining dough into the size of a fat pan. After 20 minutes baking time, place as a cover on the dough.
Sprinkle with flaked almonds and remaining sugar. Press hollows into the dough with your fingers. Spread the remaining fat in flakes on top. Serve with vanilla cream. Makes about 20 pieces.
