Ingredients

  • 100 g crushed almonds
  • 300 g Flour
  • 200 g Butter or margarine
  • 220 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 1 egg (size M)
  • 1 kg Apples
  • 3 TABLESPOONS Lemon juice
  • 60 g Cornstarch
  • 700 ml apple juice
  • 8-10 Tbsp Calvados (French apple brandy)
  • 75 g flaked almonds
  • 1 Protein
  • 150 g Icing sugar
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Apple slices and mint leaves
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Grease

Directions

    Place almonds, flour, fat, 120 g sugar, vanillin sugar, salt and eggs in a mixing bowl and fold in with the dough hooks of the hand mixer. Finally, knead quickly with cool hands to a smooth dough and let it rest in the fridge for about 1 hour.

    In the meantime, peel and quarter the apples and cut out the core. Cut apples into pieces and sprinkle with lemon juice. Mix starch with 100 ml juice. Put apples, remaining sugar and apple juice as well as 8 tablespoons of Calvados in a pot and bring to the boil while stirring occasionally.

    Let it cook for about 1 minute and bind it with the mixed starch. Bring to the boil again. Remove the pot from the stove and let it cool down. Roll out approx. 2/3 of the dough on a floured work surface (approx. 36 cm Ø) and line a greased springform pan (26 cm Ø) with it.

    Pull the dough up about 5 cm at the edge of the springform pan. Prick the dough with a fork. Spread the cooled apple mixture on the dough and smooth it down. Roll out the rest of the dough (approx. 26 cm Ø), place it on the apple mixture and press it to the edge of the dough.

    Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 1 hour. Cover after about 40 minutes. Let it cool down completely on a cake rack. Roast the flaked almonds in a dry pan until golden brown.

    Beat the egg whites until slightly frothy. Mix icing sugar, egg white and remaining Calvados. Spread the cake all around and sprinkle with almond flakes. Let it dry. Dust with icing sugar and serve decorated as desired with apple slices and mint.
