Ingredients

  • 2 Limes
  • 6 sheets Gelatine
  • 500 g Low-fat curd
  • 250 g Schmand
  • 75 g Icing sugar
  • 1 package Vanillin sugar
  • 6 (200 g) Rectangular toast waffles
  • 250 g Whipped cream
  • 350 g Strawberries
  • 1 kg Galia melon
  • 1 can(s) (850 ml) Peach halves
  • 1 pack of unsugared clear cake glaze
  • 2 TABLESPOONS Sugar

Directions

    Wash the limes hot, rub dry and finely grate the peel. Halve 1 lime, squeeze the juice. Soak gelatine in cold water. Mix quark, sour cream, icing sugar, vanillin sugar and lime zest well. Warm up the lime juice. Remove the pot from the stove.

    Squeeze gelatine well and dissolve in the hot juice. Mix 4 tablespoons of quark mixture with the gelatine until smooth and stir into the remaining quark mixture. Keep cold. Spread the waffles on a plate next to each other. Place a rectangular baking frame around the waffles. Whip the cream until stiff. As soon as the quark mixture begins to set, carefully fold in the cream. Spread the quark mixture on the waffles. Chill for about 4 hours. Wash the strawberries, dab dry. Cut one part into pieces. Halve melon, remove seeds and cut out balls.

Drain the peaches, collecting 250 ml juice. Cut peaches into slices. Cover cake with peach slices, strawberries and melon balls. Mix cake glaze powder and sugar and mix with the peach juice, bring to the boil. Remove from the heat and drizzle the cake glaze over the fruit with a spoon. Chill for about 15 minutes and cut into 16 pieces. Decorate with mint

    Cut peaches into slices. Cover cake with peach slices, strawberries and melon balls. Mix cake glaze powder and sugar and mix with the peach juice, bring to the boil. Remove from the heat and drizzle the cake glaze over the fruit with a spoon. Chill for about 15 minutes and cut into 16 pieces. Decorate with mint
