Line two baking trays with baking paper. Cream butter and sugar with the whisks of the hand mixer for about 5 minutes. Stir in egg. Sift flour and 1 pinch of salt over it and stir in. Fold in grated coconut and cranberries.
Preheat oven (electric cooker: 175°C/circulating air: 150°C/gas: level 2). Place 10 piles of dough on each tray. Press flatter with a tablespoon to make round biscuits (6-7 cm Ø). Bake one after the other in a hot oven for 8-10 minutes.
Let it cool down.
