Ingredients

  • 400 g Dark chocolate
  • 250 g soft butter or margarine
  • 200 g Sugar
  • 1 pinch Salt
  • 6 Eggs (size M)
  • 150 g Fresh cream
  • 425 g Flour
  • 1 package Baking Powder
  • 2 TABLESPOONS brown rum
  • 7-10 Tbsp Cocoa
  • 7-10 Tbsp Fat and breadcrumbs

Directions

    Finely chop the chocolate and melt 300 g over a hot water bath. Line a tray with baking paper, pour 100 g of chocolate on it and smooth it down. Chill for about 30 minutes.

    In the meantime, stir fat, sugar and salt for about 10 minutes until creamy. Stir in the eggs one by one. Add crème fraiche and mix. Mix flour and baking powder and stir in briefly. Halve the dough. Stir the remaining melted chocolate and rum into one half.

    Grease a ring cake tin (2 litres capacity) and dust with breadcrumbs. Alternately fill in the dough by the spoonful. Bake the cake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 1 hour.

    In the meantime, break cooled chocolate into pieces and chill again. Take the cake out of the oven, let it cool for 5 minutes and turn it over onto a kitchen grid. Let it cool down. Melt the remaining 100 g chocolate over a hot water bath.

    and put it on the cake as a frosting. Sprinkle chocolate chips on top. Allow to set and dust the cake with cocoa. Serve immediately.
