Cinnamon cake with grape syrup

Ingredients

Servings: 24
  • 2 Cinnamon sticks
  • 1 Organic Orange
  • 7-10 Tbsp Fat and flour
  • 1⁄4 l virgin olive oil
  • 100 g Sugar
  • 250 g Petimezi (Greek grape must syrup; alternatively honey)
  • 350 g Flour
  • 1 heaped Tsp baking powder
  • 40 g Walnut kernels
  • 2 TABLESPOONS Icing sugar

Directions

    1⁄4 l Bring water and cinnamon sticks to the boil in a pot and simmer for about 5 minutes. Remove from the heat and pour through a sieve. Measure 60 ml and let it cool down. In the meantime, wash the orange hot, dab dry and finely grate the peel.

    Squeeze orange.

    Grease a springform pan (26 cm Ø) and dust with flour. Preheat the oven (electric cooker: 175°C/circulating air: 150 °C/gas: see manufacturer). Mix oil, sugar, petimezi, cinnamon water, orange peel and orange juice in a bowl with a whisk.

    Mix flour and baking powder. Gradually stir in with the whisks of the mixer.

    Put the dough into the springform pan and smooth it down. Bake in a hot oven for about 35 minutes. Let it cool down. Roughly chop the walnuts. Remove the cake from the tin, dust thickly with icing sugar and sprinkle with nuts.
