Chocolate strawberry cake

Ingredients

  • 50 g Fine dark chocolate (70% cocoa content)
  • 100 g Butter or margarine
  • 3 Eggs (size M)
  • 300 g + 1 teaspoon sugar
  • 2 packages Vanillin sugar
  • 1 pinch Salt
  • 1 TABLESPOON Cocoa powder
  • 150 g Flour
  • 6 sheets Gelatine
  • 1 kg Strawberries
  • 500 g Low-fat curd
  • 250 g Edible quark (20 % fat in dry matter)
  • 200 g Whipped cream
  • baking paper

Directions

    Roughly chop the chocolate. Carefully melt fat and chocolate over a warm water bath. Leave to cool a little. Beat the eggs, 250 g sugar, 1 packet of vanillin sugar and salt until creamy. Carefully stir in the chocolate-fat mixture and cocoa, sift flour over it and fold in. Line the bottom of a springform pan with baking paper, fill in the dough and smooth it down.

    Bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25-30 minutes. Take the cake out of the oven, remove from the edge of the springform pan and let it cool on a grid. Soak gelatine in cold water. Wash the strawberries and put 3 pieces aside. Clean the rest of the strawberries. Puree approx. 100 g strawberries and 1 teaspoon sugar. Put the remaining strawberries on the bottom with the tip pointing upwards. Squeeze 1 sheet of gelatine, dissolve and mix with 2 tablespoons of strawberry puree, then stir into the puree. Mix quark, 50 g sugar and 1 packet of vanilla sugar. Whip the cream until stiff. Squeeze 5 sheets of gelatine, dissolve and mix with 4 tablespoons of quark, then stir into the remaining quark.

    Puree approx. 100 g strawberries and 1 teaspoon sugar. Put the remaining strawberries on the bottom with the tip pointing upwards. Squeeze 1 sheet of gelatine, dissolve and mix with 2 tablespoons of strawberry puree, then stir into the puree. Mix quark, 50 g sugar and 1 packet of vanilla sugar. Whip the cream until stiff. Squeeze 5 sheets of gelatine, dissolve and mix with 4 tablespoons of quark, then stir into the remaining quark. Fold in the cream. Place a cake ring around the cake and spread about 2/3 of the cream on the strawberries. Fill 1/3 of the quark cream alternately with the puree into the ring and draw streaks through the puree with a spoon. Chill the cake for at least 1 hour. Before serving, decorate the cake with halved strawberries

    Fold in the cream. Place a cake ring around the cake and spread about 2/3 of the cream on the strawberries. Fill 1/3 of the quark cream alternately with the puree into the ring and draw streaks through the puree with a spoon. Chill the cake for at least 1 hour. Before serving, decorate the cake with halved strawberries
