Chocolate mousse with strawberry-raspberry-rosemary skewer

Ingredients

  • 150 g Dark chocolate coating
  • 2 fresh eggs (size M)
  • 2 TABLESPOONS Coffee Liqueur
  • 2 TABLESPOONS Sugar
  • 200 g Whipped cream
  • 4 small twigs rosemary
  • 4 Raspberries
  • 4 small strawberries

Directions

    Roughly chop 150 g chocolate and melt in a bowl over a warm water bath. Remove from the stove and allow to cool slightly. Separate the eggs. Beat the egg yolks, liqueur and sugar with the whisk of the hand mixer until creamy. Whip cream and egg whites separately until stiff

    Stir the chocolate and 1/3 of the cream into the egg yolks. Then fold in the beaten egg white and finally fold in the remaining cream loosely (do not mix completely). Pour into 4 dessert glasses and chill for approx. 4 hours

    Wash the rosemary and shake dry. Sort the raspberries. Wash strawberries and pat dry. Put strawberries and raspberries on the rosemary twigs. Finely chop 20 g chocolate. Sprinkle chocolate mousse with chocolate and serve with rosemary skewers
