Chocolate lava cake from the glass

Ingredients

Servings: 6
  • 350 g Raspberries (fresh or frozen)
  • 3 TABLESPOONS Sugar
  • 150 g Sugar
  • 150 g Dark chocolate
  • 75 g Butter
  • 3 Eggs (Gr. M)
  • 2 Protein
  • 1 pck. Vanilla sugar
  • 7-10 Tbsp Salt
  • 50 g Flour
  • 2 TEASPOONS Lemon juice

Directions

    Select fresh raspberries, rinse if necessary. Bring fresh or frozen raspberries, 3 tbsp water and 3 tbsp sugar to the boil in a pot and simmer for about 10 minutes. Stir from time to time. Leave to cool slightly. Roughly chop the chocolate. Melt 75 g butter and chocolate together in a hot water bath. Let cool down a little.

    Preheat oven (electric cooker: 200 °C/circulating air: 180 °C/gas: see manufacturer). Grease six preserving jars (approx. 220 ml capacity each). Beat 3 eggs, 75 g sugar, vanilla sugar and 1 pinch of salt until creamy with the whisks of the mixer. Stir in the liquid chocolate-butter mixture well. Stir in flour. Spread the dough into the preserving jars. Spread the raspberries carefully with a tablespoon so that the layers do not mix. Bake in a hot oven for about 10 minutes.

    Wipe the bowl with lemon juice. Add 2 egg whites to the bowl. Add 2 tsp lemon juice and whisk at medium speed with the whisks of the mixer, then continue beating at top speed. When the mixture begins to stiffen, add 75 g sugar. When all the sugar has been stirred in, continue beating until it has dissolved. The beaten egg whites are ready when the mixture is shiny white and sticks compactly to the whisk.

    Remove glasses from the oven for a short time, turn down the oven temperature (electric cooker: 150 °C/circulating air: 130 °C/gas: see manufacturer). Spread the meringue mixture in large blobs on the glasses. Continue baking for 8-10 minutes. Then take out and let cool down. Tastes lukewarm or cold.
