Chicken soup \"Waterzooi\"

Ingredients

Servings: 4
  • 1 Chicken breast (400 g; with bone)
  • 1 big onion
  • 1 collar Soup Greens
  • 7-10 Tbsp Salt
  • 250 g mixed mince
  • 1 Egg (Gr. M)
  • 2 TABLESPOONS Breadcrumbs
  • 7-10 Tbsp white pepper, nutmeg
  • 1/8 l White wine or broth
  • 4-8 discs Baguette
  • 1 TABLESPOON butter/margarine

Directions

    Wash the meat. Peel and halve the onion. Clean, wash and chop the greens. Boil up meat, 1/2 onion and half soup vegetables with 1 1/2 l salted water. Cover and simmer for about 20 minutes

    Cut the remaining onion into fine cubes. Knead with minced meat, egg, breadcrumbs, salt, pepper and nutmeg. Shape about 16 dumplings. Add to the chicken breast and simmer everything else for about 10 minutes. Take out meat and dumplings. Sieve the broth

    Bring stock and wine to the boil. Remaining soup vegetables in it

    Cook for about 10 minutes. Remove the meat from skin and bones and cut into slices. Heat meat and dumplings in the soup, season to taste. Roast bread in hot fat. Serve with the soup

    Instead of the soup vegetables you can also take 1 smaller stick of leek, 2 carrots, 1/4 celery root and possibly 1 parsley root
