Ingredients

  • 1 glass (720 ml) Cherries
  • 100 g dark chocolate
  • 375 g Butter or margarine
  • 275 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 6 Eggs (size M)
  • 200 ml Egg liqueur
  • 425 g Flour
  • 1 package Baking Powder
  • 25 g Cocoa powder
  • 2 TABLESPOONS Icing sugar
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Mint and fresh cherries

Directions

    Pour the cherries into a sieve and drain well. Roughly chop the chocolate. Cream fat, 250 g sugar, vanillin sugar and salt with the whisk of the hand mixer. Add the eggs one after the other and stir in.

    Add the advocaat and stir until the sugar is dissolved. Mix 400 g flour and baking powder and stir in. Halve the dough. Dust cherries with 25 g flour. Stir cocoa and 25 g sugar into one piece of dough.

    Fold in chocolate. Fold half of the cherries into the light dough, the rest of the cherries into the dark dough. First fill the light and then the dark dough into a well greased springform pan (26 cm Ø) sprinkled with flour and with a tube bottom insert.

    Marble the dough with a fork. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 1 1/4 hours. If necessary, cover the cake with aluminium foil halfway through the baking time.

    Remove from the oven, place on a grid and leave to cool in the mould for about 30 minutes. Remove from the mould and allow to cool on the grid. Dust with icing sugar and serve on a plate decorated with mint and cherries as desired.
