Ingredients

  • 5 Eggs (size M)
  • 150 g Flour
  • 225 g Sugar
  • 7-10 Tbsp Salt
  • 130 g Butter
  • 500 g (720 ml; separation weight:370 g) morello cherries or 1 glass
  • 500 g Low-fat curd
  • 1 package Pudding powder "Vanilla Flavor"
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 TABLESPOON Icing sugar
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Flour
  • baking paper
  • 7-10 Tbsp Dried peas

Directions

    Separate 1 egg. Mix flour, 50 g sugar, salt, egg yolk, 100 g butter and 1 tablespoon ice water with the dough hook of the hand mixer to a smooth dough. Wrap in foil and chill for about 30 minutes. Roll out the dough on a floured work surface to a circle (approx. 32 cm Ø). Grease a springform pan (26 cm Ø) and line it with the dough so that the edge of the dough stands up about 3 cm. Prick the base several times with a fork and cover with baking paper.

    Pour in dry peas. Bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for approx. 20 minutes on the bottom shelf. In the meantime, wash and stone the cherries. Melt the rest of the butter and set aside. Separate remaining eggs. Mix egg yolk, 150 g sugar, quark, pudding powder and lemon zest. Beat all egg whites until stiff, while letting the remaining sugar trickle in. Fold the liquid butter first, then the beaten egg whites into the quark. Remove peas and baking paper from the bottom and pour in half of the quark mixture. Sprinkle some cherries on top and cover with the rest of the quark. Add the rest of the cherries.

    Mix egg yolk, 150 g sugar, quark, pudding powder and lemon zest. Beat all egg whites until stiff, while letting the remaining sugar trickle in. Fold the liquid butter first, then the beaten egg whites into the quark. Remove peas and baking paper from the bottom and pour in half of the quark mixture. Sprinkle some cherries on top and cover with the rest of the quark. Add the rest of the cherries. Bake in the preheated oven (electric: 175 °C/ gas: level 2) for about 45 minutes. Let it rest in the oven for about 10 minutes. Let it cool down on a grid and take it out of the mould. Dust with icing sugar before serving. Results in approx. 12 pieces
