Grease the springform pan (approx. 24 cm Ø). Wash the lemon hot, dab dry and finely grate the peel. Halve the lemon and squeeze the juice. Drain the peaches
Beat the eggs, 100 g sweetness and salt until fluffy. Stir in quark, 3 tbsp. lemon juice, zest and pudding powder. Spread half the quark mixture into the mould. Cover with peaches, possibly up to 2 halves. Spread the rest of the quark mixture on top
Bake in the preheated oven (electric oven: 175 °C/circulating air: 150 °C/gas: level 2) for 50-55 minutes. Let them cool down. Sprinkle with 6 g sweetness. Decorate with peaches and balm
