Ingredients

  • 7-10 Tbsp Grease
  • 400 g + 350 g flour
  • 75 g + 175 g + 200 g sugar
  • 7-10 Tbsp salt - 200 ml milk
  • 1 cube (42 g) fresh yeast
  • 75 g + 175 g + 100 g soft butter
  • 8 Eggs (Gr. M)
  • 3 packages Vanillin sugar
  • 7-10 Tbsp Flour
  • 750 g Apricots
  • 375 g Blackberries
  • 1.25 kg Low-fat curd
  • 7-10 Tbsp grated zest of 1 organic lemon
  • 1 package Pudding powder vanilla
  • 5-6 Tbsp breadcrumbs (50-60 g)

Directions

    Grease a fat pan (approx. 32 x 39 cm; at least 3.5 cm deep). Mix 400 g flour, 75 g sugar and 1 pinch of salt. Warm the milk lukewarm. Crumble yeast into it and dissolve it. Add 75 g butter in flakes, 1 egg and yeast milk to the flour mixture.

    Knead everything smooth with the hand mixer. Cover and leave to rise in a warm place for about 45 minutes.

    For the crumbles, first mix 350 g flour, 175 g sugar, 1 packet of vanilla sugar, 1 pinch of salt, 175 g butter in flakes and 1 egg using the dough hooks of the hand mixer. Then work into crumbles with your hands and chill for about 30 minutes.

    Knead the yeast dough well again, then dust with a little flour and roll out on the fat pan, pressing the edges into the corners. Cover and leave to rise for about 30 minutes.

    Wash, halve and stone the apricots. Sort blackberries, wash if necessary. Melt 100 g butter at low heat, let it cool down for about 5 minutes. Mix quark, 6 eggs, 200 g sugar, 2 sachets vanilla sugar, lemon peel and pudding powder.

    Stir in the melted butter.

    Sprinkle yeast dough with breadcrumbs. Spread with the quark mixture and cover with the fruit. Then sprinkle the crumbled dough on the cake, rubbing the dough between your fingers. Bake in the preheated oven (electric cooker: 175 °C/circulating air: 150 °C/gas: level 2) for approx. 45 minutes.
