Peel the apples, cut the core in half. Cut apple halves fan-like. Sprinkle with lemon juice. Beat fat, 200 g sugar, vanillin sugar and salt until frothy. Fold in 4 eggs one after the other.
Add lemon zest. Mix flour, baking powder, starch and cocoa, sieve onto the egg mixture and fold in carefully. Pour the dough onto a greased, flour-spread pan of the oven and smooth it down. Dab apples dry and cover the dough with it. Beat 4 eggs and 50 g sugar until frothy. Stir in mascarpone, curd cheese and pudding powder. Spread the quark mixture over the apples. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 1 hour. Take out, let cool down and cut into pieces.
