Cheese and plum tart with short pastry base

Ingredients

  • 100 g Butter
  • 250 g Sugar
  • 1 Egg yolk (size M)
  • 170 g Flour
  • 750 g Plums
  • 1 Lemon
  • 500 g Low-fat curd
  • 500 g Mascarpone
  • 4 Eggs (size M)
  • 1 package Pudding powder "Vanilla Flavor"
  • 7-10 Tbsp Lemon balm
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Aluminium foil

Directions

    For the shortcrust pastry, cut butter into pieces. Mix butter, 50 g sugar, egg yolk, 1 tablespoon water and flour first with the dough hooks of the hand mixer, then with your hands to a smooth dough. Cover the dough and chill for about 30 minutes. In the meantime wash plums, dab dry, halve and stone them. Cut 250 g plums into slices.

    Squeeze lemon. Mix quark, mascarpone, 200 g sugar, 3 tablespoons lemon juice, eggs and pudding powder to a smooth mixture. Fold in plum wedges. Grease a springform pan (26 cm Ø). Roll out the dough on a floured work surface until it is round (approx. 34 cm Ø) and line the springform pan with it, press the rim firmly. Pour in the quark mixture and smooth it down. Bake the cake in the preheated oven on the bottom shelf (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 50-60 minutes. If the surface becomes too dark, cover with aluminium foil. Turn off the oven, open the door and leave the cake in the oven for another 30 minutes. Remove the cake from the edge of the springform pan with a knife and let it cool down on a cake rack for about 2 hours.

    Pour in the quark mixture and smooth it down. Bake the cake in the preheated oven on the bottom shelf (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 50-60 minutes. If the surface becomes too dark, cover with aluminium foil. Turn off the oven, open the door and leave the cake in the oven for another 30 minutes. Remove the cake from the edge of the springform pan with a knife and let it cool down on a cake rack for about 2 hours. Halve part of the plum half. Remove the cake from the tin, cover with the plum quarters and halves and decorate with lemon balm
