Cheese and ham croquettes

Ingredients

  • 1 small onion
  • 50-75 g raw ham (e.g. Serrano ham)
  • 50 g Butter
  • 50 g Flour
  • 1/4 l Milk
  • 100 g grated manchego cheese
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 l oil for frying
  • 125 g Breadcrumbs
  • 1 Egg
  • 7-10 Tbsp Parsley and paprika stuffed olives
  • 7-10 Tbsp Oil

Directions

    Peel the onion. Finely dice onion and ham. Heat butter in a pot and fry the onion in it. Add flour and sauté briefly. Stir in milk. Bring everything to the boil while stirring and let it simmer for about 4 minutes. Add cheese and simmer for another 1 minute. Add ham. Season the sauce with salt and pepper and spread it in an oiled, flat dish. Let it cool down and put it in a cool place for 2-3 hours. Form approx. 20 small croquettes from the mixture with lightly floured hands. Whisk egg, some salt and pepper. Turn croquettes one after the other in breadcrumbs, egg and again in breadcrumbs. Chill the croquettes for about 1 hour. Heat the oil in a high pot (or in a deep fryer to approx. 180 °C). Fry the croquettes in portions in hot oil until golden brown. Lift out the finished croquettes and let them drip off on kitchen paper. Serve hot or cold. Garnish with parsley and olive slices

    You can serve various Spanish cheeses (e.g. Tinajeros/herbal rims, Queso de Cabra Artesano/goat milk washed in red wine = red rind), various olives, small figs filled with almonds and garlic prawns
