Peel and wash the carrots and blanch them in plenty of bubbling salt water for about 2 minutes. Rinse in cold water and drain on a sieve. Brush the carrots with oil and cut into pieces of about 3 cm. Cut Parma ham into strips of about 2 cm and wrap them around the carrots. Pick 3 pieces of carrots on a toothpick and arrange with basil and salad leaves
