Clean the salad, wash and spin dry. For the vinaigrette, wash parsley, shake dry, pluck leaves from the stems and chop finely. Chop the walnuts. Whisk vinegar, salt, pepper, mustard and honey.
Add oil drop by drop. Peel the shallot and cut into fine cubes. Stir parsley, nuts and shallots into the vinaigrette. Clean, clean and slice the mushrooms. Arrange bacon, mushrooms and salad on plates.
Drizzle with vinaigrette.
