Ingredients

  • 165 g cold butter
  • 1 egg (size S)
  • 325 g Sugar
  • 225 g Flour
  • 2 sheets Gelatine
  • 4-5 Lemons
  • 50 g Cornstarch
  • 7 TABLESPOONS Sugar cane brandy (e.g. cachaça)
  • 3 Egg yolk (size M)
  • 1 Lime
  • 7-10 Tbsp demerara sugar
  • 7-10 Tbsp Grease
  • baking paper
  • 7-10 Tbsp Pulses

Directions

    Cut 150 g butter into cubes. Knead the egg, 75 g sugar, butter and flour with the dough hooks of the hand mixer, then work into a smooth dough with your hands. Cover the dough and chill for about 20 minutes. For the lemon cream, soak gelatine in cold water. Halve 3-4 lemons, squeeze them and measure 150 ml. Boil up lemon juice, 150 ml water and 250 g sugar.

    Mix cornflour with 100 ml cold water, stir into the juice and simmer for another 1-2 minutes. Squeeze the gelatine. Stir gelatine, cachaça and 15 g butter into the juice. Quickly stir in the egg yolks. Grease the tart mould (24 cm Ø) with a removable base. Roll out the dough on a floured work surface (approx. 27 cm Ø) and line the tart mould with it. Cut off any protruding edges. Line the mould with baking paper and fill with pulses. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 20 minutes in a blind oven. Take the base out of the oven, remove the pulses and baking paper. Let the base cool down. Pour lemon cream into the cold tart and chill for at least 2 hours.

    Cut off any protruding edges. Line the mould with baking paper and fill with pulses. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 20 minutes in a blind oven. Take the base out of the oven, remove the pulses and baking paper. Let the base cool down. Pour lemon cream into the cold tart and chill for at least 2 hours. Wash 1 lemon and 1 lime, rub dry and cut off 12 thin slices each. Cut the tart into 12 pieces, decorate with 1 slice of lime and 1 slice of lemon and some brown sugar
