Cabbage pancakes

Ingredients

Servings: 4
  • 2 Eggs (size M)
  • 350 ml Milk
  • 150 g Flour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Nutmeg
  • 300 g Savoy cabbage
  • 1 medium onion
  • 1 collar Parsley
  • 150 g streaky smoked bacon
  • 5 TSP Oil
  • 7-10 Tbsp Pepper

Directions

    Stir eggs, milk, flour, salt and nutmeg until smooth and allow to swell for about 30 minutes

    Cleaning the savoy cabbage. Remove thick leaf veins, cut finely. Peel onion, wash parsley. Chop both. Dice bacon.

    Heat 1 tsp. oil in a frying pan and fry the bacon until crispy. Steam onion and savoy cabbage for about 5 minutes. Cool down a little, season. Stir in parsley. Stir half into the dough, spread the rest in an ovenproof dish

    Heat 4 teaspoons of oil in portions in a frying pan (approx. 28 cm Ø). Bake 4 golden-brown pancakes from the dough one after the other. Roll them up and place them on the savoy cabbage. Grate the cheese on top

    Bake in a hot oven (electric oven: 200 °C/circulating air: 175 °C/gas: level 3) for 8-10 minutes until the cheese has melted

    Drink: cold Czech beer, e.g. Staropramen
