Drain the plums and collect the juice. Boil up the juice. Stir starch and 1 tablespoon of water until smooth. Bind the juice with it. Add the plums and simmer for about 2 minutes. Stir in plum puree and rum. Leave to cool.
Whip the cream until stiff and allow the vanilla sugar to trickle in. If necessary, fill into a piping bag with a large star-shaped spout
First spray some cream onto the waffles or place a spoon on each one, then spread some compote on top. Place two waffles on top of each other. Decorate with mint. Serve immediately
Also delicious are the thick soft butter waffles
Bake briefly in a toaster, pan or oven and serve warm, or, if you don't want to cook extra compote, you can also serve the waffles with ready-made plum jam. Stir this with 2 tablespoons of rum or juice until smooth.
