Braised roast beef on tomato and bean vegetables

Ingredients

Servings: 6
  • 1.5 kg Beef for braising (e.g. semer roll or false fillet)
  • 200 g Onions
  • 30 g clarified butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 375 ml clear soup
  • 1 kg broad beans (alternatively 400 g frozen broad beans)
  • 600 g Cutting beans
  • 2 (approx. 500 g) Meat Tomatoes
  • 1 pot or approx. 1/2 bunch coriander
  • 1.25 kg waxy potatoes
  • 8–10 young garlic cloves
  • 4-5 Tbsp Oil

Directions

    Wash the beef and dab dry. Peel onions and dice them coarsely. Heat clarified butter in a large frying pan. Fry the meat in it, turning it all around. Add onions and fry briefly.

    Season the meat with salt and pepper, deglaze with broth. Cover and braise in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 2 1/2 hours. In the meantime peel, wash and drain the beans.

    Wash, clean and cut the beans into pieces. After approx. 30 minutes, spread the beans around the meat and braise with it. Wash, clean and roughly dice the tomatoes. From the coriander, except for something to garnish, pluck off the leaves.

    After about 1 1/2 hours, mix the tomatoes and coriander into the beans, season with a little salt and pepper and braise until done. Peel, wash and slice the potatoes. Wash the garlic cloves and let them drain.

    Heat the oil in a large frying pan. Sauté the potato wedges while turning, adding garlic cloves at the end and frying. Close the pan with a lid and fry over a low to medium heat for 10-15 minutes.

    Stir in between and finally season with salt and pepper. Cut the roast beef into slices and arrange on a deep plate with tomato and bean vegetables and the stewed stock. Sprinkle with fresh coriander leaves.

    Add garlic roast potatoes extra.
