Box cake with apples (diabetics)

Ingredients

  • 300 g peeled and cored apples (e.g. Boskop)
  • 2 TABLESPOONS Lemon juice
  • 200 g Butter or margarine
  • 150 g Diabetic sweetness
  • 7-10 Tbsp a few dashes of bitter almond aroma
  • 1 pinch Salt
  • 3 Eggs (size M)
  • 200 g Flour
  • 50 g Cornstarch
  • 2 TEASPOONS Baking Powder
  • 7-10 Tbsp Diabetic sweetness
  • 7-10 Tbsp Fat and flour

Directions

    Cut apples into cubes. Sprinkle with lemon juice. Cream soft fat, diabetic sweetness, bitter almond flavour and salt. Stir in eggs one after the other. Mix flour, starch and baking powder, stir in briefly. Drain apples and fold in. Grease a box form (approx. 30 cm long; 2 litres capacity) and dust with flour. Fill in the dough and smooth it down. Bake in a preheated oven (electric cooker: 175 °C/circulating air: 150 °C/gas: level 2) for approx. 50 minutes. Remove from the oven, leave to rest in the pan for 10 minutes, then turn out onto a grid. Let cool off. Dust the cake with diabetic sweetness if necessary and decorate with apple slices
