Ingredients

  • 40 g Butter or margarine
  • 4 Eggs (size M)
  • 150 g Flour
  • 150 ml Milk
  • 150 g Sugar
  • 1 pinch Salt
  • 1 glass (720 ml) Cherries
  • 1 package Red fruit jelly "raspberry flavor
  • 2 packages Vanillin sugar
  • 2 packages Cream stabiliser
  • 500 g Whipped cream
  • 50 g Chocolate shavings (plain)
  • 25 g white couverture
  • baking paper
  • 7-10 Tbsp Oil
  • 7-10 Tbsp Freezer bag
  • 7-10 Tbsp wooden skewers

Directions

    Line a baking tray with baking paper and brush with oil. Heat in a preheated oven (electric cooker: 200 °C/ circulating air: not suitable/ gas: level 3) for approx. 10 minutes. Meanwhile melt the fat and let it cool down. Whisk eggs, 75 g sugar and salt with the whisk of the hand mixer until creamy. Stir in flour and milk. Stir in liquid fat briefly.

    Spread the pancake batter evenly on the baking tray. Bake in the preheated oven (at the same temperature) for about 15 minutes. Take the pancakes out of the oven, turn them out on a damp tea towel and let them cool down. In the meantime, drain the cherries and collect the juice. Mix 6 tablespoons cherry juice, groats powder and 75 g sugar. Boil up the rest of the cherry juice. Add the mixed powder and bring to the boil while stirring. Add the cherries and fold in. Spread the cherry groats evenly on the pastry sheet (leaving a 1 cm wide rim free) and chill for 30 minutes. In the meantime mix vanilla sugar and cream thickener. Whip the cream until stiff. At the same time, allow the cream mixture to trickle in.

    Add the mixed powder and bring to the boil while stirring. Add the cherries and fold in. Spread the cherry groats evenly on the pastry sheet (leaving a 1 cm wide rim free) and chill for 30 minutes. In the meantime mix vanilla sugar and cream thickener. Whip the cream until stiff. At the same time, allow the cream mixture to trickle in. Fold the chocolate shavings into the whipped cream. Spread the cream evenly on the cherry groats. Roll up the pancakes from the long side and refrigerate for about 1 hour. Coarsely chop the chocolate coating and melt it in a hot water bath. Pour into a freezer bag, cut off a small corner and spray strips onto the roll. Cut the pancake roll into 12 slices and arrange on skewers

    Fold the chocolate shavings into the whipped cream. Spread the cream evenly on the cherry groats. Roll up the pancakes from the long side and refrigerate for about 1 hour. Coarsely chop the chocolate coating and melt it in a hot water bath. Pour into a freezer bag, cut off a small corner and spray strips onto the roll. Cut the pancake roll into 12 slices and arrange on skewers
