Ingredients

  • 150 g Flour
  • 230 g Butter
  • 280 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 3 Eggs (size M)
  • 75 g Common wheat semolina
  • 750 g Low-fat curd
  • 2 TABLESPOONS liquid honey
  • 100 g Whipped cream
  • 30 g flaked almonds
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp Grease

Directions

    Mix flour, 60 g butter in pieces, 30 g sugar and 3 tablespoons of cold water with the dough hooks of the hand mixer. Quickly work into a smooth dough with your hands. Wrap in cling film and chill for about 30 minutes. Cream 75 g soft butter, 75 g sugar, vanillin sugar and salt. Separate 2 eggs. Add 1 egg and egg yolk one after the other.

    Stir in semolina and quark. Grease the springform pan (26 cm Ø) and roll out the dough on it. Prick several times with a fork. Place the edge of the springform pan (8 cm high) around it. Beat 2 egg whites and 75 g sugar until stiff. Fold into the quark mixture. Fill into the springform pan and smooth it down. Bake in a preheated oven (electric: 175 °C/ gas: level 2/ convection oven: not suitable) for about 30 minutes. Bring 90 g butter, 100 g sugar, honey and cream to the boil and simmer for about 5 minutes. Stir in almonds. Remove the cake edge from the edge of the springform pan. Spread the icing on the cake and bake for another 20 minutes.

    Bake in a preheated oven (electric: 175 °C/ gas: level 2/ convection oven: not suitable) for about 30 minutes. Bring 90 g butter, 100 g sugar, honey and cream to the boil and simmer for about 5 minutes. Stir in almonds. Remove the cake edge from the edge of the springform pan. Spread the icing on the cake and bake for another 20 minutes. Loosen the edge of the springform pan and let it cool in the pan on a cake rack. Remove the edge of the springform pan after about 20 minutes. Let the cheese cake cool down and serve
