Bean pot with herb meatballs

Ingredients

Servings: 4
  • 1.2 kg broad beans
  • 300 g green beans
  • 500 g Potatoes
  • 3 (approx. 300 g) Carrots
  • 1 big onion
  • 1/2 bunch Parsley
  • 3 Stem(s) fresh or slightly dried marjoram
  • 400 g Pork sausage
  • 7-10 Tbsp white pepper, salt
  • 1-2 TABLESPOONS clarified butter
  • 2-3 TABLESPOONS Vegetable broth

Directions

    Peel and wash the broad beans. Green beans clean, wash and halve. Peel and wash potatoes and carrots. Dice potatoes, cut carrots into slices. Peel and slice onion

    Wash the herbs and chop finely. Knead the ground pork, chopped herbs, except for 1 tablespoon, and pepper. Form small balls with moistened hands

    Heat clarified butter in a large pot. Brown the balls in it all around and take them out. Steam onion in hot frying fat until transparent. Steam carrots and potatoes briefly

    Deglaze with 1-1 1/2 l water, stir in broth and bring to the boil. Simmer all beans covered in it for about 20 minutes. Add the meatballs after about 10 minutes and cook them. Season bean pot, arrange and garnish with the remaining herbs
