Basic recipe: elderberry juice

  • 2 kg fully ripe elderberries
  • 400 g Sugar

    Uncomplicated - from the pot: For approx. 1 l unsweetened elderberry juice. Sort out the elderberries, wash and put them dripping wet with stalks into a large pot. Put a lid on top, bring to the boil and simmer at medium heat for 20-25 minutes.

    Pass the elderberries through a fine sieve or cloth. Squeeze the berries a little, if necessary. For the sweetened version, bring the finished juice and sugar to the boil again, then pour into clean bottles, close and allow to cool.

    Shelf life 3-6 months.

    Productive - with steam juicer : For approx. 1.5 l sweetened elderberry juice. 2 kg fully ripe elderberries sorted and washed. Fill the water pot of a steam juicer with water according to the instructions for use, pour 400 g sugar into the juice collecting vessel and place on top.

    Berries and add spices such as cloves, cinnamon or lemon to the strainer insert, place on top. Put the lid on. Bring water to the boil in the juicer on the stove. Juice for a total of 30-45 minutes.

    Fill hot juice into clean bottles. Shelf life 6-9 months.
