Ingredients

  • 200 g Flour
  • 180 g Sugar
  • 1/2 package Baking Powder
  • 1 egg (size M)
  • 75 g Butter
  • 1 kg sour apples (e.g. Jonagold)
  • 2-3 TABLESPOONS Lemon juice
  • 1-2 TABLESPOONS Breadcrumbs
  • 2 packs Pudding powder "Vanilla Flavor"
  • 1 (750 ml) Fasche Asti spumante (sweet sparkling wine)
  • 25 g Pine nuts
  • 1 package Vanillin sugar
  • 1 package Cream stabiliser
  • 250 g Whipped cream
  • 1 TABLESPOON Icing sugar

Directions

    Mix flour, 150 g sugar and baking powder. Add egg, butter in pieces and 1-2 tablespoons of ice-cold water, knead everything quickly to a smooth dough. Cover and chill for about 30 minutes. Peel apples, cut into eighths and core them, cut into pieces. Sprinkle with lemon juice. Roll out the dough on a floured work surface until round (approx. 34 cm Ø). Grease a springform pan (26 cm Ø) and place the dough plate in the pan. Press the rim 4-4.5 cm high. Sprinkle the dough base with breadcrumbs, spread apples on top. Mix pudding powder with 30 g sugar. Stir smooth with about 100 ml sparkling wine. Bring the rest of the sparkling wine to the boil, remove from the stove. Stir in the pudding powder and simmer for at least 1 minute. Spread the pudding hot over the apples, smoothing it down if necessary. Bake in the preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) on the lower shelf for 50-60 minutes. Leave to cool for 4-5 hours. Roast pine nuts in a pan without fat until golden brown. Let them cool down. Mix vanillin sugar and cream stabiliser. Whip the cream until stiff, allowing the sugar mixture to trickle in. Pour cream into a piping bag with a star-shaped spout. Decorate the cake with it. Sprinkle with pine nuts and dust with icing sugar
