Ingredients

  • 600 g Flour
  • 375 g + 225 g butter/margarine
  • 300 g + 175 g sugar
  • 1/2 TEASPOON Cinnamon
  • 1 pinch Salt
  • 7-10 Tbsp Grease
  • 2 can(s) (850 ml each) Apricot halves
  • 1 package Vanillin sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 3 Eggs (Gr. M)
  • 500 g Low-fat curd
  • 250 g Skimmed milk yoghurt
  • 1 Bag of custard powder "Vanilla Flavor
  • 2 TABLESPOONS Icing sugar for dusting

Directions

    Mix the flour, 375 g fat, 300 g sugar, cinnamon and salt with the dough hooks of the hand mixer into crumbles. Grease a fat pan (approx. 35 x 40 cm). Press 2/3 of the dough into it as a base

    Drain the apricots and spread on the base. Stir 225 g soft fat, 175 g sugar, vanillin sugar and lemon peel until light creamy. Stir in the eggs bit by bit. Add quark, yoghurt and pudding powder and mix everything until smooth. Put the quark mixture on the apricots and smooth it down

    Spread the rest of the crumble on the quark. Bake the cake in the preheated oven (electric cooker: 200 °C / convection oven: 175 °C/ gas: level 3) for about 50 minutes. Dust with icing sugar before serving
