Apple tart with macaroon grid

Ingredients

  • 450 g Flour
  • 275 g Sugar
  • 1 package Vanillin sugar
  • 3 Eggs (size M)
  • 200 g cold butter
  • 2 kg Apples (e.g. Boskop)
  • 7-10 Tbsp Juice of 1 lemon
  • 1 package Pudding powder "Vanilla Flavor"
  • 500 ml apple juice
  • 100 g Almond slivers
  • 600 g Marzipan raw mass
  • 7-10 Tbsp Grease

Directions

    Knead 400 g flour, 125 g sugar, vanillin sugar, 1 egg and butter in flakes to a smooth dough. Cover and chill for about 1 hour. Peel apples, quarter them, remove seeds and cut into pieces. Mix with lemon juice. Mix the pudding powder with 4 tablespoons of apple juice until smooth. Heat apples with remaining apple juice and 50 g sugar.

    Cover and simmer for about 2 minutes. Remove from heat, stir in the pudding powder, heat up again and simmer for about 1 minute while stirring. Stir in almond slivers and let cool down. For the macaroon mixture, whisk the marzipan with the whisk of the hand mixer until smooth. Stir in 2 eggs one after the other. Add 100 g sugar and 50 g flour and stir in. Roll out the shortcrust pastry on cling film rectangular (32 x 38 cm). Grease the fat pan of the oven. Line the bottom of the pan with the dough sheet using the foil. Add apple compote and smooth down. Put the macaroon mixture into a piping bag with a star-shaped spout. Spray a grid on the apple mixture.

    Roll out the shortcrust pastry on cling film rectangular (32 x 38 cm). Grease the fat pan of the oven. Line the bottom of the pan with the dough sheet using the foil. Add apple compote and smooth down. Put the macaroon mixture into a piping bag with a star-shaped spout. Spray a grid on the apple mixture. Bake in the preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) on the lower level for 40-45 minutes. Let it cool down and cut into pieces
