Wash, quarter and core the apples. Cut the fruit flesh into thin slices. Sprinkle with some lemon juice.
Caramelise 3 tablespoons of sugar in a pot while stirring until light brown. Deglaze with wine and bring to the boil. Mix starch and 1-2 tbsp. water until smooth and stir into the wine. Add apple slices and stew covered for about 4 minutes. Let cool off
Stir the quark, sour cream and vanilla sugar until smooth. Season to taste with remaining lemon juice and 1-2 tbsp. sugar. Fill into 4 dessert bowls, arrange apple compote on top. Decorate if necessary
