Ingredients

  • 4 Eggs (size M)
  • 200 g Flour
  • 100 g Butter or margarine
  • 380 g Sugar
  • 500 g Apples
  • 7-10 Tbsp Juice of 1 lemon
  • 200 g Marzipan raw mass
  • 30 g ground pistachio kernels
  • 5 TABLESPOONS Calvados
  • 2 packages Pudding powder "Vanilla Flavor"
  • 830 ml Milk
  • 7-10 Tbsp scraped pulp from 1 vanilla pod
  • 1 package Vanillin sugar
  • 40 g Cornstarch
  • 350 g Low-fat curd
  • 1 (approx. 150 g) Apple to decorate
  • 20 g crushed pistachio kernels
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp Oil
  • 7-10 Tbsp Aluminium foil

Directions

    Separate 1 egg. Knead flour, fat, 100 g sugar, 1 egg and egg yolk to a smooth dough. Wrap in cling film and chill for 30 minutes. In the meantime, peel, quarter, core and slice apples. Drizzle with lemon juice. Grate marzipan coarsely, stir with ground pistachios, 3 tablespoons of Calvados and egg white until smooth.

    Roll out the dough on a floured work surface until round (36 cm Ø) and line a greased springform pan (26 cm Ø) with it. Pull the dough up about 6 cm at the edge of the springform pan. Spread the pistachio marzipan on the base and smooth it down. Spread apples on top. Mix pudding powder with 60 g sugar and stir with 200 ml milk until smooth. Bring 550 ml milk and vanilla pulp to the boil, remove from the heat. Stir in the pudding powder, bring to the boil again while stirring and let it boil for 1 minute. Stir 2 tablespoons of Calvados into the pudding, immediately place on the apples and smooth down. Beat 2 eggs, 120 g sugar and vanillin sugar until thick and creamy. Sift the starch on top. Add quark and 80 ml milk and stir in. Pour the quark mixture onto the pudding and smooth it down.

    Stir 2 tablespoons of Calvados into the pudding, immediately place on the apples and smooth down. Beat 2 eggs, 120 g sugar and vanillin sugar until thick and creamy. Sift the starch on top. Add quark and 80 ml milk and stir in. Pour the quark mixture onto the pudding and smooth it down. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 50 minutes. Let it cool down. To decorate, wash the apple, quarter it, remove the core and cut it into slices. Caramelise 100 g sugar in a pan until light brown. Turn apple slices in it. Place on an oiled piece of tin foil and let it cool down. Decorate the cake with apple slices and chopped pistachios
