Ingredients

  • 375 g Flour
  • 75 g + 3 tablespoons sugar
  • 7-10 Tbsp Salt
  • 250 g Butter
  • 1 kg firm, sour apple
  • 1 TABLESPOON Cornstarch
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp Cinnamon
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Cling film

Directions

    Mix flour, 75 g sugar and 1 pinch of salt. Add butter in flakes and add 4-5 tablespoons of cold water. Mix first with the dough hooks of the hand mixer, then with your hands to a smooth dough. Wrap the dough in foil and refrigerate for about 30 minutes. Roll out 2/3 of the dough on a floured work surface to a circle (approx. 30 cm Ø).

    Place the dough in a greased and floured mould (26 cm Ø) and press the rim lightly. For the filling, peel, quarter, core and cut apples into small cubes. Mix apples, starch, 3 tablespoons sugar, lemon juice and cinnamon. Spread the filling on the dough. Set aside a small piece of the remaining dough. Roll out the dough on a floured work surface to a circle (approx. 26 cm Ø). Put a lid on the filling. Press the edges of the dough together. Roll out the remaining dough thinly and cut out decorations. Decorate the dough lid with it.

Bake in the preheated oven (electric range: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 1 hour. Take the finished cake out of the oven, let it cool down and put it in a cool place
