Ingredients

  • 100 g Butter
  • 170 g + 1 tablespoon of sugar
  • 1 egg (size M)
  • 1/2 TEASPOON Baking Powder
  • 225 g Flour
  • 4 medium-sized apples
  • 2 TABLESPOONS Lemon juice
  • 400 ml apple juice
  • 1 package Pudding powder "Vanilla Flavor"
  • 4 TABLESPOONS Maple syrup
  • 50 g dried cranberries
  • 1 knife tip ground cinnamon, cloves and nutmeg
  • 1-2 TABLESPOONS Icing sugar
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp Aluminium foil

Directions

    Cut butter into pieces. Knead with 70 g sugar, egg, baking powder and flour first with the dough hooks of the hand mixer, then with your hands until smooth. Wrap dough in cling film and chill for about 30 minutes. Peel, quarter and core apples. Cut apples into cubes and sprinkle with lemon juice. Boil 100 g sugar with 350 ml apple juice.

    Stir 50 ml juice and pudding powder until smooth and stir into the boiling juice, bring to the boil and boil again for about 1 minute. Add maple syrup, cranberries and apple pieces. Season with cinnamon, nutmeg and cloves. Roll out approx. 2/3 of the shortcrust pastry on a floured work surface until round (approx. 26 cm Ø). Grease a quiche tin (18 cm Ø) and dust with flour. Line the mould with shortcrust pastry, press down at the edges. Spread the apple compote on top of the pastry until smooth. Roll out the rest of the dough on a floured work surface and cut into strips of approx. 1 cm wide using a dough wheel. Place the dough strips on the apple compote. Sprinkle with 1 tbsp. sugar. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-40 minutes.

    Roll out the rest of the dough on a floured work surface and cut into strips of approx. 1 cm wide using a dough wheel. Place the dough strips on the apple compote. Sprinkle with 1 tbsp. sugar. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-40 minutes. If necessary, cover with aluminium foil after 25 minutes of baking time. Let the cake cool down in the tin. Dust with icing sugar before serving
