Ingredients

  • 250 ml Milk
  • 1 cube (42 g) Yeast
  • 500 g Flour
  • 100 g + 2 tablespoons sugar
  • 100 g Butter or margarine
  • 1 package Vanillin sugar
  • 7-10 Tbsp Salt
  • 2 Eggs (size M)
  • 200 g Marzipan raw mass
  • 2 rosy-cheeked apples
  • 1 TEASPOON Lemon juice
  • 100 g Almond slivers
  • 1/2 TEASPOON ground cinnamon
  • 1 TABLESPOON Sugar syrup
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Fat and flour

Directions

    Warm up the milk. Crumble yeast into it and mix with the milk. Put the flour in a bowl and make a depression in the middle. Sprinkle 100 g sugar on the edge of the flour. Pour yeast milk into the hollow and dust with a little flour. Cover and leave to rise in a warm place for about 30 minutes. In the meantime melt the fat.

    Add fat, vanilla sugar, 1 pinch of salt and 1 egg to the pre-dough. Mix everything with the dough hooks of the hand mixer to a smooth dough. Cover the dough and let it rise in a warm place for about 30 minutes. In the meantime finely grate the marzipan. Mix marzipan and 1 egg with the whisk of the hand mixer until thick and creamy. Wash apples, grate dry, quarter them and cut out the core. Dice quarter finely. Sprinkle apples with lemon juice. Mix marzipan mixture, apples and almond slivers. Knead the yeast dough again and roll out into a rectangle (30 x 42 cm) on a well floured work surface. Spread the marzipan mixture evenly on top, leaving a 3 cm wide rim all around. Roll up from the long side and cut into 14 slices (each approx. 4 cm wide). Grease an angular springform pan (24 x 24 cm) and dust with flour.

    Dice quarter finely. Sprinkle apples with lemon juice. Mix marzipan mixture, apples and almond slivers. Knead the yeast dough again and roll out into a rectangle (30 x 42 cm) on a well floured work surface. Spread the marzipan mixture evenly on top, leaving a 3 cm wide rim all around. Roll up from the long side and cut into 14 slices (each approx. 4 cm wide). Grease an angular springform pan (24 x 24 cm) and dust with flour. Place slices in the form. Mix 2 tablespoons of sugar and cinnamon and sprinkle on the cake surface. Cover the cake and let it rise again for about 15 minutes. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 40 minutes. Allow to cool slightly and remove from the tin. Spread the cake with sugar syrup

    Place slices in the form. Mix 2 tablespoons of sugar and cinnamon and sprinkle on the cake surface. Cover the cake and let it rise again for about 15 minutes. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 40 minutes. Allow to cool slightly and remove from the tin. Spread the cake with sugar syrup
