Apple marzipan cake

Ingredients

  • 750 g Apples (e.g. Jonagold)
  • 120 g Sugar
  • 2 Eggs (size M)
  • 150 g Flour
  • 1 coated Tsp Baking Powder
  • 1 package Vanillin sugar
  • 75 g Butter
  • 200 g Marzipan raw mass
  • 1 TABLESPOON Icing sugar
  • 7-10 Tbsp Mint
  • 7-10 Tbsp Grease

Directions

    Peel, quarter, core and cut apples into pieces. Put them in a pot with 50 g sugar and stew covered at low heat for about 10 minutes. Stir from time to time. The apples should be soft, but not yet crumbled. Drain on a sieve and let them cool down.

    Separate the eggs. Mix flour, baking powder, 70 g sugar and vanillin sugar. Add the egg yolks and butter in pieces and knead into a smooth dough with the dough hooks of the hand mixer. Grease a springform pan (26 cm Ø). Pour the dough into the form, press flat, forming a 2 cm high rim. Chill for about 30 minutes. Put apples on the dough. Stir marzipan until smooth, add egg whites one after the other. Fill into a piping bag with star-shaped spout and sprinkle the cake with it. Bake in the preheated oven (electric cooker: 150 °C/ convection oven: 125 °C/ gas: level 1) for 35-40 minutes.

    Put apples on the dough. Stir marzipan until smooth, add egg whites one after the other. Fill into a piping bag with star-shaped spout and sprinkle the cake with it. Bake in the preheated oven (electric cooker: 150 °C/ convection oven: 125 °C/ gas: level 1) for 35-40 minutes. Let it cool down. Dust the edge with icing sugar. Decorate with mint
