Warm buttermilk slightly. Dissolve yeast in it. Melt 75 g butter. Pour flour, 100 g sugar and salt into a mixing bowl. Add yeast milk, butter and egg.
Work into a smooth dough with the dough hooks. Cover and leave to rise in a warm place for about 20 minutes. In the meantime wash, clean, quarter and core the apples. Cut the fruit flesh into small pieces. Sprinkle with lemon juice, steam for about 5 minutes, drain. Knead the dough briefly, roll out on a greased baking tray, leave to rise for about 20 minutes. Mix egg white and marzipan. Pour into a piping bag with a small star-shaped spout. Spread 100 g butter in flakes and apple pieces on the dough. Spray marzipan on top at intervals.
