Halve the vanilla pod and scrape out the pulp with the back of a knife. Wash the mint. Boil up the sugar, vanilla pod and pulp, mint and 5 tablespoons of water. Wash apples, grate dry, quarter and core them. Cut the quarters into 3 slices first, then into pieces.
Steam the apple pieces in the stock for 3-4 minutes, place in a sieve, drain and collect the stock. Remove vanilla pod and mint. Reduce the stock until it is thick and let it cool down. Put the apples back into the stock. Break Amarettini roughly into 8 pieces. Whip cream and vanilla sugar until stiff. Layer cream, apples and amarettini crumbs in 4 glasses. Finish with a spoonful of cream. Crumble 4 amarettini.
