Wash, peel and quarter the apples and cut out the core. Cut the apple quarters into thin slices and boil them up with 300 ml apple juice, 60 g sugar and lemon juice. Cover and simmer for 3-4 minutes. Mix sauce powder with remaining juice until smooth, stir into the compote and let it boil again for another 1 minute. Let the compote cool down. Crumble the brown bread finely. Heat butter in a pan and roast the crumbs in it while turning.
Let it cool down. Whip cream until semi-stiff. Mix quark, remaining sugar and about 1/2 teaspoon cinnamon. Fold in the cream and flavour the cream again with cinnamon. Layer apple compote, quark and breadcrumbs alternately in glasses. Keep cool until serving
