Ingredients

  • 275 g soft butter
  • 250 g Sugar
  • 2 packages Vanillin sugar
  • 4 Eggs (size M)
  • 500 g Low-fat curd
  • 1 package Pudding powder "Vanilla Flavor"
  • 1,75 kg Apples (e.g. Elstar)
  • 7-10 Tbsp Juice of 1 lemon
  • 1 pinch Salt
  • 200 g Flour
  • 1 1/2 TSP. Baking Powder
  • 250 g Apricot Jam
  • 7-10 Tbsp Grease

Directions

    Cream 150 g butter, 150 g sugar and 1 packet of vanilla sugar with the whisk of the hand mixer. Separate 2 eggs. Chill the egg whites. Stir in the egg yolks bit by bit. Stir in curd cheese and pudding powder. Peel, quarter and core apples, cut them into thin slices and sprinkle with lemon juice.

    For the sponge mixture, mix 125 g butter, 100 g sugar, 1 packet vanillin sugar and salt with the whisk of the hand mixer until creamy. Stir in 2 eggs one after the other. Mix flour with baking powder, stir in little by little. Grease the fat pan of the oven (32 x 39 cm). Put the dough on top and smooth it down. Beat the egg white with the whisk of the hand mixer until stiff. Carefully fold into the quark cream. Spread half of the apples fan-shaped on the dough. Pour the quark cream on top and smooth it down. Spread the rest of the apple slices on the quark cream close together. Bake in the preheated oven (electric range: 200 °C/ convection oven: 175 °C/ gas: level 3) on the bottom shelf for 45-50 minutes.

    Beat the egg white with the whisk of the hand mixer until stiff. Carefully fold into the quark cream. Spread half of the apples fan-shaped on the dough. Pour the quark cream on top and smooth it down. Spread the rest of the apple slices on the quark cream close together. Bake in the preheated oven (electric range: 200 °C/ convection oven: 175 °C/ gas: level 3) on the bottom shelf for 45-50 minutes. Bring the jam to the boil, pass through a sieve. Remove cake from the oven. Brush apples with it and bake for another 5 minutes. Leave to cool on a cake rack. Serve with whipped cream
