Apple Blueberry Crispy Cake

Ingredients

  • 125 g soft + some + 100 g butter
  • 50 g Sugar
  • 1 Egg (Gr. M)
  • 60 g ground almonds (without skin)
  • 200 g + some + 50 g flour
  • 60 g crunchy oats
  • 50 g demerara sugar
  • 40 g flaked almonds
  • 7-10 Tbsp Cling film
  • baking paper
  • 7-10 Tbsp Pulses
  • 150 g frozen blueberries
  • 1 kg Apples (e.g. Elstar)
  • 2 TABLESPOONS Lemon juice
  • 75 g Sugar

Directions

    For the dough, mix 125 g soft butter, sugar and egg with the whisks of the mixer until creamy. Stir in ground almonds and 200 g flour briefly, then knead into a smooth dough with floured hands.

    Form into a flat ball, wrap in cling film. Chill for at least 1 hour.

    For the filling, defrost the blueberries in a sieve. Peel, quarter and core apples and cut them into pieces of about 1 cm. Mix immediately with lemon juice and sugar in a pot. Cover and cook over medium heat for about 3 minutes.

    Then cook open for about 2 minutes at high heat, stirring frequently. Let it cool down.

    Preheat oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Grease the springform pan (26 cm Ø). Roll out the dough between two sheets of baking paper to a round shape (approx. 30 cm Ø). Remove the upper sheet of paper.

    Carefully turn the dough into the mould using the bottom paper. Remove the paper. Press the dough into the mould, forming a rim about 3 cm high. Cover the bottom with baking paper, cover with pulses and bake blind in a hot oven for about 15 minutes.

    Remove the bottom from the oven. Remove the legumes and paper and continue baking at the same temperature for about 10 minutes until the base is golden brown. In the meantime for the crispy crust.

    Melt 100 g butter. Mix oat flakes, 50 g flour and brown sugar. Stir in butter with the whisks of the mixer. Mix in the flaked almonds.

    Spread apples and blueberries on the floor. Spread a crispy crust on top. Bake at the same temperature for about 35 minutes. Take out and let cool down. Carefully remove from the tin and let cool.

    Tastes warm and cold with e.g. whipped cream.
