Apple and walnut cake

Ingredients

  • 4-5 Tbsp Lemon juice
  • 4–5 Apples
  • 125 g Icing sugar
  • 225 g soft butter
  • 50 g Walnut kernels
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 125 g Sugar
  • 3 Eggs (size M)
  • 175 g Flour
  • 1/2 package Baking Powder
  • 1 TEASPOON ground cinnamon
  • 25 g Cornstarch
  • 7-10 Tbsp (Picture -03: Pin sugar for sprinkling)
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Aluminium foil

Directions

    Mix lemon juice and about 500 ml water. Wash apples, dab dry and use an apple corer to cut out the core. Slice apples crosswise to the core into thin slices and put them into the lemon water.

    Grease the bottom and rim of a springform pan (26 cm Ø). Cover the outside of the springform pan firmly with aluminium foil. Caramelise icing sugar and 5 tbsp. water in a pan until golden brown. Add 125 g butter and melt while stirring.

    Pour butter caramel into the springform pan. Dab the apple slices dry well, spread them out from inside to outside, close to each other like roof tiles and press them down a little (make sure that there are no holes).

    Chop the walnuts. Cream 100 g butter, salt, vanillin sugar and sugar with the whisk of the hand mixer. Stir in the eggs one by one. Mix flour, baking powder, cinnamon, walnuts and starch, add in portions and stir in.

    Carefully spread the dough on the apples and smooth it down. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 50-70 minutes (stick test). Remove from the oven and place on a cake rack.

    Remove the cake from the edge of the springform pan and let it cool in the pan for about 5 minutes. Remove the edge of the springform pan, turn the cake onto a cake plate and let it cool completely. (Picture -03: Sprinkle with sugar crystals.) Whipped cream tastes good with it.
