Apple and pear compote with cinnamon curd

Ingredients

Servings: 4
  • 2-3 sour. Apples (approx. 450 g)
  • 1-2 (approx. 250 g) Pears
  • 100 ml apple juice
  • 2-3 TABLESPOONS Lemon juice
  • 1/2-1 Vanilla pod
  • 2 TABLESPOONS + approx. 1 tablespoon sugar
  • 100 g Edible quark (40 % fat in dry matter)
  • 3-4 Tbsp Milk
  • 1 package Vanillin sugar
  • 7-10 Tbsp Cinnamon
  • 7-10 Tbsp Mint

Directions

    Wash apples and pears, peel as desired. Quarter the fruits, remove the core. Cut the fruits into slices. Boil up apple juice or water and lemon juice. Score the vanilla pod lengthwise, scrape out the pith. Add to the juice with 2 tablespoons of sugar. Cover the fruit and steam for about 5 minutes. Let the compote cool down

    Stir the quark, milk and vanillin sugar until smooth. Season to taste with cinnamon and approx. 1 tbsp. sugar. Arrange the compote on four small plates. Put a blob of cinnamon quark on each plate and sprinkle with a little cinnamon. Decorate with mint if you like.

    If you have no milk at hand, simply stir the quark with some mineral water until smooth

    You can also flavour the apple and pear compote with bourbon vanilla sugar or ground ginger instead of vanilla pod
